Irish Poitín Sour

Ingredients:

  • 50 ml poitín (e.g., Micil Irish Poitín or Micil Heritage Poitín)
  • 25 ml fresh lemon juice
  • 15 ml simple syrup (1:1 ratio of sugar to water)
  • 15 ml egg white (optional for a frothy texture)
  • 2 dashes of Angostura bitters
  • Lemon twist or cherry for garnish

Instructions:

  1. Prepare the Ingredients:
    • If using an egg white, separate it from the yolk and measure 15 ml.
  2. Mix the Cocktail:
    • In a cocktail shaker, combine the poitín, fresh lemon juice, simple syrup, and egg white (if using).
    • Dry shake (without ice) vigorously for about 15 seconds to create a frothy texture from the egg white.
    • Add ice to the shaker and shake again until well-chilled.
