This yeast maintained robust fermentation even in low temperatures between 10 to 12 degrees Celsius, consistently exhibiting excellent qualities for over 80 years. Its distribution enabled regions like Hokuriku,Tohoku, Shinshu, and others to establish themselves as renowned sakeproducing areas. Genetic analysis revealed that while Kyokai Koubo 1 to 5 had minimal genetic relation to Kyokai Koubo 6, it was the “parent” responsible for generating all yeasts from Kyokai Koubo 7 onwards through sudden mutation.

Aromas reminiscent of apples and bananas prevail. It offers umami and
a well-rounded acidity in the aftertaste, enhancing its sharpness.
