During the fermentation process, sake kasu (sake lees) are added to the rice. The shochu is stored in sherry barrels to give it depth of the flavour.
The matured mild smoothness, the rich fruity deep aroma like vanilla with the delicate fragrance of sake, and the amber colour reminds you of whiskey.
