EH Shuzo is a sake brewery with a long history dating back to the end of the Edo period, located in Azumino, Nagano Prefecture. Azumino is a place of abundant natural water, known for the "Azumino Wasabi Fields Spring Water Group," which was selected as one of Japan's top 100 famous water sources. The water used in brewing is sourced from the pure underground water created from the rain and snowfall in the Northern Alps, which has a maximum altitude difference of 2,500 meters.
