The Shinobu distillery is situated on the Japanese sea of Niigata, where strong sea breezes and snowfall during
the winter months create an abundance of soft and clear water, known locally as the land of “three whites’- Snow,
Rice, and Sake. Usami Ken, the master distiller, uses artisanal brewing methods for mashing and fermentation
that have been collected over the course of more than 30 years.
